Buttered popcorn is so early 90's
I 100% stole this snack recipe from Joy Bauer, who spoke about healthy food choices as part of my Institute for Integrative Nutrition program. Joy emphasizes that every snack should have protein and fiber to keep you energized and full. That is all true, but mostly I just love popcorn so any snack that incorporates it has me sold.
It’s this easy:
1. Spray some olive oil on ‘clean’ popcorn (not the Orville butter kind, please)
2. Mix together with roasted peanuts and roasted edamame.
3. Toss with any seasonings of your choice – I did cumin, turmeric, coriander and salt.
In case you missed the last 30 years, movie theater butter popcorn is terrible for you. Stop suffering through eater’s remorse and feel better about yourself while watching “We’re the Millers” in IMAX. And then feel bad about yourself for going to see “We’re the Millers” in IMAX.
